I want to share my recipe for a Coconut- & Chestnut flour bread, which is low carb, gluten free, dairy free, high in protein from all the eggs we use and most of all super easy to make and delicious to eat!
It’s the bread I showed you on this What I Ate Wednesday post. I’ve been stuffing my face with this bread from Monday through Wednesday :p and unfortunately now it’s gone… luckily the recipe is super simple so I will be making it again very soon ;)
The ingredients are:
- ¾ cup coconut flour – sifted
- ¾ cup chestnut flour – sifted
- 2 tsp baking powder
- 1 tbsp xylitol
- ½ tsp fine salt
- ½ tsp Chinese 5 spice or pumpkin spice
- ½ tsp vanilla powder
Mix the dry ingredients in a large mixing-bowl. In another bowl add:
- 10 eggs + 2 egg whites
- ½ cup + 1 tbsp coconut oil
- 3 tbsp water
- 2 tbsp chopped fresh ginger (optional)
Mix the wet ingredients and add to the dry ingredients. Stir to combine.
→ As you can see it’s kinda like making a cake and the batter should be that of a thick cake batter ←
Preheat your oven to 175°C / 350°F.
This amount of batter makes 2 normal sized loafs so you can either fill 2 loaf tins, or do as I did, get one huge silicon cake dish and fill ¾th to the top.
Bake the bread for 40 minutes. Make sure to check after 35 minutes to see if it’s done. It may need more time than just 40 minutes, but only you can be the judge of that ;) A toothpick should come out clean, yet the bread should still feel soft and moist… just like with a deliciously moist homemade cake.
…Actually…. this batter would make a fabulous cake if you’d add a little bit more sweetness to it, and maybe some cinnamon or vanilla extract, and adding cacao powder would be awesome… OK; stop fantasizing about cake, for now, let’s turn it into bread shall we… ;)

I’ve tried this bread with both savory and sweet toppings and it’s all just as good! I think I love it best plain with a thick layer of coconut butter, but a healthy helping of almond butter – with jelly – or some slices of cheese is really good too! ;)
